I need to make cookies right away and am posting first - I'll search while awaiting collective CH wisdom! I have the 21-oz Trader Joe's chocolate peppermint loaf mix and would like to turn it into chewy cookies topped with the TJ peppermint bark baking chips I bought last year but never used. The cake directions call for adding 2 eggs, 1/3 cup of oil or melted butter, and 2/3 cup melted butter.
I am thinking 1 egg (since I don't want a lot of rise and the mix already has leavener), melted butter (for flavor even though oil might be better for flatness), and only as much water as needed for typical cookie dough consistency. Opinions/experiences? TIA!
