Has anyone else noticed that uni has a very variable taste? Sometimes it's sweet and creamy and utterly lucious, other times it's not so sweet and has a funny flavor that hits me in the back of my mouth. And occasionally it tastes just awful. Is this related to how fresh it is? Where it was harvested? The season? when is its season anyway? etc? I can have two pieces on my plate and they will taste very different.
Do you know of any way to visually differentiate between the yummy and the yucky? Or any other uni tips?
I keep ordering it in the hopes that it will be the wonderful, succulent kind, but it seems like a real crapshoot.
