One of the most pleasurable feeling pertaining to fine dining was being able to pick out those under-rated star establishments that are on the verge of 'multiple-stardom'. In a way, it is an achievement of sort to try them out when they are still charging a reasonable 'discounted' price and then in a few months time, to see them being awarded one or more stars ( and then a huge mark-up in price ). A few such examples were when I managed to dine at Paris' Grand Vefour, Guy Savoy and Arpege a while back, when they were all still 2 stars but serving 3 stars calibre food. Its a great feeling later on to pick up a copy of Le Monde in the morning and read that those restaurants got 'promoted'.!
For my upcoming trip to Tokyo, I'm planning to give a few Michelin star restaurants a try. I do not intend to visit the 3 stars because for sure they will be fully booked due to the hype. Furthermore,. I also find established 3 stars are mostly over-rated. To all of you Tokyo foodies out there, ' Of the 25 two stars and 117 one star, which, in your opinion are the most under-rated and worth a try before they get vaulted up the star ladder? ' Except for Chinese ( since I'll be coming from Hong kong ), I'm open to all suggestions, may it be Japanese, Italian, Spanish or French..... I just wanted to savour some awesome cuisine!
