I made a big thing of Beef stew today and then took a nice rewarding nap. After waking up over 2 hours later I noticed that I stupidly left the crock pot unplugged. I immediately turned it on to high and than checked everywhere I could to see if the raw beef was safe to eat. It was left sitting there for about 2 and a half hours. The beef still looked red and smelled fine. I know I broke the FDA 2 hour rule for leaving raw products out, but I was wondering how some external things could have affected if its safe or not. I washed my hands before handling, put Salt and Pepper on the beef and beef stock which is high in salt was mixed in. Will this help the beef potentially last longer, or will the water from the beef stock be a negative. In addition, the vegetables mixed in all came out of the fridge so it may have kept the temperature in the crock pot down to 60 degrees. Am I being too hopeful here or too paranoid. I am always on the safe, but it would be so sad to dump it all away.
