Just returned from Argentina, where if you "ordered" cafe (translated as espresso) you got a shot of intense coffeeness, nice crema, with no bitterness at all, it was almost mildly sweet. I normally take my coffee with milk and sugar but there I was happy drinking my "cafe" straight (ok, it was also tasty with what they call "crema," like homemade whipped cream). So it could be that "cafe" in Argentina is just a different beast from "espresso" in the states [in which case I'll move this thread to general topics] but I'm guessing it is about technique. So 'hounds -- where can I get espresso that is tasty and not bitter, preferably in the west village? And if the place offered the option of adding a dash of whipped cream so much the better!
