I want to make a meat and turnip stew in a crockpot. The meat will be in the crockpot all day (maybe 7 hours). I have done potatoes in a similar way in the crockpot and they did not break apart. I simply peeled them, cut them in half vertically, and put them in, and they came out very nice even after many hours. I used firmer long cooking potatoes for that.
What results can I expect with fresh turnips? I don't want them to overcook and break apart. Should I think of them like potatoes in terms of how they will behave? The turnips are not very large. I could even leave them whole. Or maybe I will cut them in half. Recommendations?
Also, I have been reading online about prepping turnips. I plan to peel them, but some sources recommend pricking them and soaking them in salt water before cooking with them. What purpose does this serve?
