Turkey scum at bottom of pan, how to prevent this?

Was chatting with my mother and aunt last night and this never occurred as far as any of us can remember until maybe 10 years ago? When roasting a turkey instead of getting the brown fond at the bottom, what now appears is a disgusting raft of scum. I remember the first Thanksgiving it happened, my mother was like what the xxxx did you do when I didn't do anything. We had to make emergency gravy.

Is there a way to leach this crap before roasting? I've always suspected it has to do with how poultry is brined today. Back then, you suffered from dry turkey, now everything comes out perfectly mushy with trampoline skin or perfectly fine with trampoline skin.

I do rinse the bird inside and out, dry the excess moisture and let it air dry overnight in the fridge however this year will be different since I bought the turkey the other day it's still partially frozen. I'm going to microwave it now in short increments.

The stores yesterday were sold out of smaller 8-12 lb turkeys so I'm stuck with a 15 lb store brand one. Butterballs were all 20 lbs.
