Tung's Taste is a new treasure on the North Shore that, as far as I can tell, no one knows about yet.
It's a small family-owned Chinese restaurant in a strip mall in Middleton that opened last year. Of course they have some of the American Chinese dishes you'd expect in a suburban Chinese restaurant, but look beyond those and you'll be rewarded.
The owners are passionate about their food, hospitable, friendly and make great recommendations, especially if you show an interest in the non-American dishes.
Before I give recommendations let me say something about the rice... the white rice. They use a high-quality rice that is slightly chewier and stickier and with a shorter grain than what you'd expect. It's almost like sushi rice. Many of their dishes are excellent, but when I first tried their white rice, I thought, "what is this place?" Their Tung's Fried Rice is very different from other area fried rice as well. It's simpler with fewer add-ins, but more flavor. It has hints of garlic and onion, but knowing they have a good thing, they allow the superior rice to shine through.
Many of their best dishes come from the "Original Chinese" section of the menu. Here are my recommendations:
Scallion Pancake with Beef served with hoisin (on specials board)
White Rice - yes, I'm saying that
Tung's Fried Rice - not to be confused with House Fried Rice
Spicy Chili Chicken - toward the end of the meal you'll be looking forward having what's left of it for lunch the next day, but then you betray your future self as you unthinkingly convey additional morsels into your face
Longhorn Beef - this has 2 pepper-heat indicators, but I found it spicier than any of their 3s
Fish Fillet in Spicy Broth - under Beef in Spicy Broth there is an option for fish and this is the one you want
Double-Cooked Pork - leeks and salty bean sauce on twice-cooked pork belly
Ma Po Tofu - they have a "crispy" version as well, but I prefer the normal one
Stuffed Eggplants - saddles of eggplant pressed nigiri-like with ground chicken and shrimp with an umami varnish
Dry Cooked String Beans - you'll eat these like potato chips
This exceptional place is under the radar at the moment, but it deserves more attention. I never thought I'd say, "You know where you can get great Chinese?... Middleton."
