TULSA Tallgrass Prairie Table: fresh from the farm, cooked with gourmet flair

Hope Egan, owner of Tulsa's newest hotspot, Tallgrass Prairie Table, is a restaurant veteran. She's spent 26 years in the business. But it was her childhood that shaped her new restaurant concept. She grew up on a ranch and farm, so every meal she ate was made from ingredients harvested that very day. At Tallgrass, all the meat comes from local ranches, free range and raised humanely. That means the food is fresh as can be. It's the next best thing to eating on the family farm. But don't expect simple homemade dinners. Michelle Donaldson, the chef, has spent her life cooking haute cuisine.

I visited Tallgrass before it opened. I was assigned by Oklahoma Magazine to interview Hope and Michelle. What I learned fired up my excitement. I'm not allowed by the magazine to reproduce what I wrote on another website, so I'll just give the link for my article describing the interview.

I ate in Tallgrass a few days ago and it lived up to my expectations. Since the menu is not available online, I'll give it here.

SMALL PLATES
shrimp and grits with tasso ham and maple bourbon gastrique $8
Smoked roasted bone marrow with porter onion jam and bourbon mustard $15
Animal-of-the-day tacos $7
Grilled flatbread with wild mushrooms, thyme, pesto $8

ENTREES
Spicy fried chicken with Thai panang curry gravy and lime-leaf coleslaw. $15
Grilled duck breast with carrot risotto and pomegranate molasses $25
Lemon-cured chicken with poached fennel and heirloom tomatoes $20
Grilled pork chop with sweet potato gratin and cranberry chutney $22
Cider-braised pork belly and scallops with butternut squash puree $28
Marsala braised short ribs with celery root puree and port reduction $19
Burger $13
Butternut Squash Ravioli with sage cream and cranberries $16

I had the marrow and it was creamy smooth and fantastic. The pork belly and scallops were another winner. The pigs are Berkshire and they have pedigrees a mile longer than mine. I am attaching a photo of the pork and scallop dish below. I think this is Tulsa's most exciting new restaurant.
