Tucson Mexican with gringo friendly dishes

My husband and I come to Tucson each year for the gem show (I know, I know, but it's a pilgrimage to the stones for us, for 30 years now :-). We've been exploring the restaurants in whatever area we stay in, but the one thing I've been stymied with is finding restaurants that serve good Mexican food for me, and also very mild food of almost any kind for my heat-averse New England born and bred husband. We've found Mother Hubbard on Grant Road, which isn't exactly Mexican, but it's creative and spicy with those ingredients for me, and capable of making plain old food for my husband. El Minuto is another one where my dear one isn't assaulted (his impression) by chiles. I don't mind eating by myself at food trucks or whatever, sometimes, but I'd like some restaurants that satisfy both of us to add to our repertoire. Thanks for any suggestions!
