Truffle shelf life

Tom Steele | Feb 21, 2001 01:52 PM

This misbegotten morning, I somehow found myself clearing out a shelf in my "pantry," when what to my wondering eyes should appear but a small bottle of Urbani black (summer) truffles, in a teaspoon or so of jus, in a never-opened little bottle. I vaguely recall someone giving me the truffles for Christmas at least five years ago. The bottle actually bears an expiration date "31-12-2003." Can this be? They *look* fine, sound firm when I gently shake the jar, no trace of mold or other deterioration.

My question: Are they really safe? I'd give them my old "sniff" test, but I don't know what an "off" truffle would smell like.

I'd hate to just throw them out. . . .

Can anyone help?
