Well, I just got through melting 199 oz. of chocolate with a little over 2 quarts of cream and about 40T butter to make the ganache for tomorrow's Truffle Madness Extravaganza. :) I was thrilled to find the Ghirardelli 60% chocolate chips on sale at Safeway, so I bought all that they had, which totaled 115 oz....and then added all the Ghirardelli semi-sweet they had, and then needed to add a couple of bags of Hershey's Special Dark chips to bring the total to 199 oz. I was aiming for 200, but oh well. The combination tastes really great. Verrry chocolatey. Proportionally, I added more cream and less butter than what I used for our trial run, as the ganache was too solid even at room temp. I like a truffle to have a hard coating that breaks into a softer center. But not too soft. Tricky when working with these amounts, but I think I succeeded. We shall see! I have to keep reminding myself that the folks that will be eating these are just going to be happy to receive a free gift and aren't going to be picky.
My friends are coming over for breakfast and then the fun will begin; hopefully with 3 of us at work it will go faster, but I have no idea how long the whole process will take. Wish me luck!!
