Hoping someone can help me figure out what is happening with my biscuits lately! I've been making them for years, usually using the recipe from Joy of Cooking, and I've never had any issues.
The past 4 or 5 times I've made the same recipe, though, the butter leaks out within the first 5 minutes of baking, leading to a big mess and a not-great texture. What I can't figure out is . . . why?! A few notes:
--I always start with very cold butter, and it does not melt during mixing. I've tried both a food processor and a pastry cutter to get it into a course crumb with some pea-sized pieces.
--I am baking them on an insulated baking sheet (same one I've always used)
--I've tested my oven temp, and it's accurate (same oven as before too)
--I'm using baking powder for leavening
--I live at high altitude, but again, I didn't have problems in the past
--I've tried a couple other recipes to see if it made a difference, and nope! Still leaked out.
I've tried Googling, but haven't come up with anything I'm doing wrong. It's driving me nuts! Could it be the brand of butter? It's possible I used a different one in the past. The baking powder? It's not expired, and they do rise, but maybe it's gone bad?
