Trotter raw menu redux

We discussed raw food a few weeks ago; I wanted to point out that Wine Spectator is running a story about Charlie Trotter's raw menu (and wine pairings) in this month's edition. There are also recipes for bleeding heart radish ravioli and cashew herb cheese (VERY complicated! Includes cashew, fermented and sprouted wheat berries, yeast, and various seasonings).
