Trip to New Orleans

I am coming to New Orleans for the first time this weekend. Now, I have heard that there is fabulous food but it is close to Mardi Gras and I am staying near the corner of Frenchman and Burgundy so I am concerned about being lured into tourist traps.

What are some "don't miss" mid-range places to eat, both Cajun and some of your favorite restaurants--don't mind going across to Algiers Point but I will not have a car so I would prefer walking distance? What are some places I should not miss seeing--I completely unabashed about being a tourist, it just seems that everything in the guides is about museums etc.? I want good music (jazz, blues), good walks, and places that breathe.

Oh, and finally (hope I am not pestering you) what are the lead up parades before Mardi Gras like--worth checking out? If so where should I go?

Thanks a ton in advance. I have so many guides and books that I do not know what I am looking at any more.
