trip to NYC

My husband and I are making a 4 day trip to Manhattan in April. We are from Oregon (which actually has numerous good restaurnats), and also are avid wine collectors. I need to make reservations for 3 lunches, 3 dinners, and a Sunday brunch, but Manhattan is so big that it is extremely hard to narrow this down. We appreciate smaller places with good wine lists, non-smoking, and not too noisy. WE also are very eclectic in our food tastes, and would like a variety of food to choose from. We don't mind eating from sidewalk vendors, or going to very expensive places. Can anyone give me some hints?
