I'm planning a party for 50ish people and would like to do a pig pickin'. In my mind that means 1/2 a pig shows up on the cooker, gets chopped on-site, etc. I'm looking for high quality, wood smoked, real deal, traditional North Carolina BBQ that has enough flavor by itself that sauce isn't required. Extras like chicken, ribs, sides, etc. would be nice, but the quality of the pork is primary. Any suggestions? I've searched online and found some options but I've only tried one of them first hand, so I'm looking for some expert insight. Thanks in advance!
