Transnational chow-routes

My wife and I are making the big drive back east from our new home in LA in a couple of weeks, and we'd love some advice on making the trip as chow-friendly as possible. Are there reliable guides out there for for finding cheap and interesting food in out-of-the-way places? When we drove out here last year, we followed the advice of the standard travel guides and were disappointed (and ripped off) over and over again. How about general advice on finding good places? Does anyone have any fool-proof rules of thumb for sniffing out the best local joints? As graduate students, our big challenge is eating healthily on a tiny budget. Specific recommendations in New Mexico/Arizona (where we plan to linger) would be welcome. Thanks!
