I've never eaten a fish taco, traditional or otherwise. I wanted to make them at home, and so I did an I-net recipe search. Is there a classic fish taco? An authentic, an original, a paradigmatic fish taco? Did I glean correctly that Baja is the site of their creation, and that there the fish is beer-battered, fried, and served in a fried corn tortilla with a white sauce based on sour cream or mayonnaise? Garnishes? I'd appreciate hearing about the tacos, and a pointer to a good recipe, or a recipe itself would be most welcome.
