Just wanted to share the results of the Pumpkin Challenge wrapping up at my house this weekend.
I baked up the second of two pumpkin cakes, this time made with the old stand by Libby's canned pumpkin. Last Sunday was Trader Joe's organic. Used the pumpkin cake recipe, sans honey frosting, from Everyday Food.
Despite having different consistencies straight from the can - Trader Joe's seemed to have less water content and was a slightly brighter color -- the end product wasn't significantly different -- about the same crumb/density and baked in the same amount of time (surprisingly).
Taste-wise, the Trader Joe's version seemed to have a squash-ier, less sweet taste than the Libby's - which I have to guess is based on the variety of pumpkin they use. Both cans claim 4g of sugar. In the end, both tasters in this household preferred the Libby's - I have to think the fact that we've had Libby's pumpkin pie every Thanksgiving in my life has something to do with it.
Anyone else tried this with other recipes? I'd be interested in hearing the results.
