I've always been a fan of frozen artichoke hearts and find that stewed or well-sauteed, they're a good alternative to fresh, and a lot quicker and cheaper. So I bought a package from Trader Joe's and WOW. Tender, full of flavor, and fresh-tasting. I simmered them till tender in a little salted water, then drained them and sauteed them over very high heat till they were nicely browned in spots. Next time I'm going to halve a few garlic cloves into the water, blanching them along with the chokes, and then sauteeing them right along. I ate a bowl of these for dinner but I can't wait to do a pasta dish.
