Total Greek Yogurt as Cake Filling

For you Total fans:

I made a six layer cake for T-giving that was great. Yellow cake w/ poppy seeds and orange zest baked in a jelly roll pan, cut into 3 long rectangles, sliced horizontally to make six very thin layers.

Filled it with Total 0% fat greek yogurt into which i had added melted and cooled Scharfenberger . Recipe I was tinkering with called for creme fraiche (sp?). Glazed the whole thing w/ more Schar. ganache.

The filling was great, IMHO. The slight sour/tart of the filling was a good counterpoint to the sweetness of the cake.

And God knows it didn't make that cake low fat, but I feel slightly less responsible for yesterdays sat-fat overload.
