Toqueville -- A Few Questions

My wife and I have received a nice gift card for a good meal at Toqueville. I looked at reviews, searched CH, on line photos, and their menu, and now have a few questions. We both like good food, but we have different tastes. I love game, rare meat, sushi, organ meats, dark meat chicken, etc., and will gladly eat raw oysters or strange animal parts. My wife avoids these things, prefers well done, white meat without bones, won't eat raw seafood, caviar, or rare tuna, and removes skins, fat, gristle, etc. We both like spices, herbs, flavors new and old, although I doubt she would like truffles. We both like fine wines, but are uninterested in labels rather than the wine itself.

So, questions:

Are there a few dishes that you would recommend as not to be missed, for each of us?

How accurate is the restaurant's own on-line menu? Some of the interesting dishes I saw on line are not on it now. How frequent is the menu changed? Do they have specials, and are the specials priced similarly to the menu items?

There seem to be varying opinions on the quality of the service, whther the size of portions is tiny or not, and so forth. Is this due to variability or due to change over time?

I'd probably go with wine by the glass rather than choosing just one bottle for the meal. Their wine flights mention 3 oz pours, which would make their glass prices poor value. What is the size of the wine by the glass pours?

Any information would be greatly appreciated.
