Over the Top 3 star dinner in paris for middle aged men and their mothers (awwww)

Okay... I used to post a lot on the NYC CH board but have recently moved out of the City. My best friend and I are taking our mothers (late 60s, never have travelled abroad, classic Southern ladies) to London and Paris for a couple of weeks. Both my friend and I have been to Paris numerous times and know the city well, but not the 3 stars.

We're looking for an over the top meal that will still be approachable and enjoyable for the moms who aren't CH's (the guys are) but love a nice atmosphere and the spectacle of it all.

Money is not a criteria, but value is.

Places I've been:
Tour d'Argent: amazing view, food was good but not stunning, a bit stuffy
Louis XVI in Monaco: WOW.. blew me away on all counts!

On our short list (but open to other suggestions)

* Taillevent
* Le Cinq
* Atelier du Joel Robuchon (but due to counter atmosphere, might be better for just the 2 guys)
* Gagnaire
* Grand Vefour
