Tonkatsu in Seattle

So, I've recently returned from a trip to New York City where I ate at the absolutely fabulous Tonkatsu restaurant Katsu-Hama, and I'm inspired to try to find great Tonkatsu in Seattle. Does anyone have any recommendations?

Specifically, I'm looking for some place that uses top quality pork tenderloin, and prepares it right - not just random deep frying, but using the delicate breading and everything. Etc., etc.
