Bought a bushel of really ripe Jersy tomatoes for $6 last weekend. Such a deal. I made tomato salad, tossed salad, sandwiches with fresh chevre and with mozarrella. Put up about 6 quarts for sauce later. Plan to roast some with garlic for soup and sauces. BLTs are next.
The corn has been reasonably good despite all the rain -- steamed or roasted. Roast more than you need and it makes a great salsa with tomatoes and red onions. I'm also going to scrape some ears and throw it in the freezer for later use in soups and puddings.
And then there's eggplant and okra and peaches and figs! So what are your favorite things to do with the summer's bounty?
