Tomato sauce issue

i found a recipe for a taco sauce made from tomato sauce, some spices, sugar, vinegar, and water. When i refrigerate it, it seems to turn into a gellatinous blob and the texture is completely gone even after re mixing. Is there a way to prevent the gellatanizing in the first place? Or do i just need to use it right away?
