Tomato/blue cheese relish - refrigerate?

John Kent | Aug 14, 2004 06:16 PM

I just made grilled pork tenderloin with balsamic-glazed peaches and tomato-blue cheese relish...it was a recipe I cut out of some newspaper 5+ years ago and just got around to trying. It was very good, but I have leftover relish which consists of chopped fresh tomatoes, blue cheese, salt, pepper, parsley, lemon juice, and olive oil. Should I refrigerate it? I always read that tomatoes should *never* be refrigerated, and blue cheese is already "bad", right? I'm thinking it will be OK to keep it unrefrigerated for up to 2 days. Any advice?
