TC, ol' buddy, thanks for your brilliant suggestion.
Tom Jenkins Barbeque is first-rate. Blue smoke coming
from the chimney and that wonderful hog and hickory
aroma prevading a six-block radius. Oh boy! Had the half-rack of spareribs dinner w/collards, mac 'n cheese
and cornbread. Ribs were just right, crusty on the outside, juicy and smoked pink on the inside. Enough,
probably, for two people. Very meaty, small bones.
They serve it with a sauce that's spicy but kind of on the sweet side. You have to tell them if you want them served dry, which I discovered after the fact. Still,
the sauce is nothing to be ashamed of. The collards were good, tender but not rendered down to mush, with
plenty of strong flavor. No pepper vinegar to go with,
though. Next time I'll bring my own. The mac 'n cheese
was--mac 'n cheese. The real deal, not from a kit. No
skimping on that good ol' government cheese. I'll try the chopped pork next time. Actually, I'm ready to go back right now. It's on US1 just south of Davie Blvd.
on the east side. Chances are you'll smell it before
you see it.
