Tokyo first time high-end sushi

Hello,

I am going to book one high-end sushi dinner in Tokyo for my upcoming trip in April. Based on 3rd party concierge services, it seems like I can get Harutaka, Arai, Takumi Shingo, and Masuda. Which of these would you suggest? I have never had high-end sushi before, so I cannot state a preference based on shari-style.

Also, how close to impossible are the following places to book: Sugita, Hashiguchi, Mitani, Sawada, Sho? These are not available via the concierge apps, but am willing to try my luck with a hotel's concierge (not booked yet, but will definitely not be staying at a 5 star).
