I'm just wondering if you guys have any nice spots in Tokyo where you will go specifically based on how much you like the nigiri there. If they also have super tsumami it would be a bonus!
It doesn't have to be a specific style or price range, just trying to brainstorm ideas on what fellow chowhounders count as "good" nigiri. Similarly, it doesn't matter if the meal there costs 3k yen or 30k yen; if you like it, please tell me about it! :) After all, things like "balance" is a very subjective and arbitrary thing (within a certain range of course- I think it is hard to achieve "balance" when the fish is going "off" and the rice is stone cold ;) )
For myself, I really thought the nigiri was really strong at these places:
Jiro Honten- didn't like being rushed but that is Jiro's prerogative as, but the nigiri there is really special
Kimura- very firm rice, akazu+salt=yay
Iwa- simple & well-calibrated nigiri
Sawada- I think his nigiri quality is quite good ("bold") despite most foodies liking mainly his tsumami course.
Just to start this thread, I am thinking of trying these places for nigiri & fun:
Harutaka- following the Hypebeast train (joking!)
Yoshino- want to try super strong seasoning (they use komezu, right?)
Matsunami- for "quiet" rice
Ichiyanagi- for the reportedly salty shari & ball shape :)
Tokami- for salty & strong akazu shari
