Tofu Maintenance

I bought a regular "tub" of firm tofu at the grocery store (a plastic tub with tofu in water with a plastic label you rip back) If I don't want to cook it all tonight, do I just put it in fresh water after tkaing some out? If I use it over 3 nights (I live alone and am making a small stir fry) do I change the water each time I use it? Should it remain covered? TIA.
