At last month's Taco Festival in Salinas, the stand I was most excited to discover was Tlaxiaco's Pizza. It's a mobile wood-fired oven offering pizzas with Mexican-inspired toppings. Tlaxiaco's regular home base is two markets in San Jose. However, it also does catering and special events like this one.
We got a half and half of the Pastor and Oaxaqueña toppings. Pizzas were $15 apiece. As someone who loves piña on my al pastor tacos, the bits of juicy pineapple mingled with the marinated pork plus onions and cilantro on a tomato sauce and cheese base was heavenly. That said, I had a preference for the Oaxaqueña with the cecina, black beans, strings of quesillo cheese, avocado, tomato, cilantro and onions added tlayuda-style over the baked mozzarella base. The crust was on the bland side and could have used more salt, but it was baked well, as can be seen from the upskirt. A really delicious pizza concept.
