Tipping in Houston's Hybrids

This may get moved, but I refer specifically to the explosion of restaurants in Houston that have varying service levels. Restaurants like Ruggles Green and Pronto Cucinino, and Cafe Express have counter service (and pay at the counter) with very little continuing service other than food delivery and clean-up. At places like Willie's Icehouse and Grill, you order at the counter, take your ticket to the table and have normal service thereafter, and pay the server. Luby's Cafeteria has a "server" who greets you at your table and refills your drinks or fetches back-ordered food.

And then there is take-out anywhere. If tip is for wait service, how much should the tip be for bagging food?

This really confounds me, and I wonder what you hounds think of it. Better yet, hounds that are also restaurant staff. I got some pretty bad attitude this week from a take-out person. Perhaps I need a tipping coach.
