I'm looking at some small copper pots on-line and wondered about general maintenance concerns.
Some of the used pans look rather tarnished but, the tin appears to be intact. Others show "shiny" tin with what appears to be some burned on food (little black specs or streaks in an otherwise shiny pan).
How do you clean something burned on, assuming no metal scrubbies? Does the tin need to be maintained in a shiny state for cooking or, is the tarnish just cosmetic? Do you only need to consider retinning when the copper is exposed?
Any tips for shopping on-line (Ebay) are appreciated too.
