In Philly, in the 40's, 50's or so, they had many old time oyster houses. You know,the ones with the big white tiles, and counter seats that all served fried oysters and clams, stews, and such. Many had private deviled clams, using bread, spices, chopped clam, etc. in their recipes. I have saved a few, but cannot find any others to add to my collection. I am about ready to buy about 100 chowders and wondered if anyone had any old-time favorites in their files to help me.
