About a year ago I received an inquiry asking where to purchase fresh duck blood for holiday cooking. My standard answer has been to refer folks to the two duck farms in Petaluma --- Sonoma County Poultry and Reichardt Duck Farm. Then I learned that neither sells fresh duck blood currently. That set me off on a quest to find a source, and I started with a Vietnamese restaurant, Binh Minh, that serves a not-on-the-menu Tiet Canh Vit (fresh duck blood pudding).

Binh Minh is a casual neighborhood place. All the other customers inside were men watching sports and having a beer with friends.

The raw congeal duck blood topped with poached duck liver is served with a sesame seed rice cracker, roast peanuts, nuoc cham dipping sauce, limes, Thai bird chiles, and an abundance of fresh herbs.

The very fresh greenery included cilantro, mint, fish mint, rau ram and basil.

The blood pudding binds bits of duck meat and gristle and is topped with duck liver. Velvety and poached perfectly, the slices of rich duck liver were wonderful. But then the oozing liquid from the fresh blood started to look gory.

I combined a little of everything in a small bowl and tucked in. The raw blood was surprisingly not bitter nor metallic/iron tasting. While I'm glad to have tried it, let's just say I had a lot leftover to share.

This church key was brought to the table with my dish. Not sure how it's utilized for Tiet Canh Vit. Or maybe it was a hint that this is drinking food and I was expected to order some brews.

Besides Tiet Canh Vit, Binh Minh also specializes in goat preparations, including De 7 Mon (seven courses of goat).

The menu includes veal, pork and more duck dishes as well.

My server pointed out the art in the next room, a frankly kind of disturbing illustration of a woman kissing a billy goat. It's made from individual grains of rice.

I did find out that the restaurant gets its fresh duck blood from the farm in the Morgan Hill/Gilroy area that supplies its ducks every day. My server said the poultry houses in Little Saigon also sell duck blood. He mentioned as well that Binh Minh's second location on Story Road caters to the westernized younger generation and does not offer this dish.
