Thick, rich, long-simmered vegetable soup -- anywhere?

Just made a pot the other night, and it's almost gone -- it was amazing. Now want to find something in the city for times my frozen batches are depleted.

Something loaded with veggies and cooked down to about 1/4 of it's original size -- ultra-concentrated veggie flavor where the veggies all break down naturally in the long cook time lending great body and rich veggie flavor.

I used tomatoes (Pomi), beef stock, carrots, celery, garlic, onion, turnips, cabbage, cauliflower, zucchini, green pepper, white beans, spinach, parsley, basil -- whatever I happened to have in the fridge that day. Was amazing!

Must find something similar, or any other amazingly rich soups!!
