Would love some advice on this. I'm thinking this year since we have only 6 for thanksgiving and one is a veg that I might try my hand at a stuffed turkey breast instead of a whole bird. I have a few questions though - Can you find large organic breasts? - Should I brine it as I would a whole bird , but for a shorter time? Anything I should know about what type of stuffing since it will be cooking for a shorter period of time?(I'll make a pan outside the bird as well)How do I keep the breast moist?
