I read with interest the thread on non-pie pumpkin desserts for Thanksgiving. I need something that can be prepared in advance, (at least two days), then refrigerated or frozen, and that can then survive a five-hour car trip on Thanksgiving morning.
For those of you who may have made the pumpkin-apricot layer cake or the pumpkin roll, would these meet my criteria? We are not big cheesecake fans. Is the pumpkin roll's filling very dense and cream cheesey? That might be too heavy unless there's a way to make it a little lighter.
The cake looks fabulous but a little daunting (and possibly fragile).
