Thai pork roast?

Hi. I'm thinking of making a Thai flavored pork roast (1-2 lb boneless roast, browned and then roasted in oven to 140 degrees, resting until it reaches 155 degrees). Can I rub curry paste on to the roast and roast it in the oven or will it burn? Could coconut milk be added so the pan drippings yield a sauce? Thanks.
