One more Laotian-Thai eatery for my lunch stop in August 2018. One of my favorite dishes in the Lao pantheon is Kao Pik. Here the handmade chewy tapioca-rice noodles in chicken broth were topped sliced breast meat, crispy shallots, cilantro, shaved white onion and scallions. I didn't muck up its purity with too many condiments, just a little of the spicy vinegar from the pickled jalapeño jar. Simple, homemade tasting comfort food.
I had a little bit of a wait for a table on a Tuesday. But I was happy to see it so busy. This restaurant set up a buffet table at Crosspoint Church when Carr Fire evacuees sought shelter there. Why did I hit the Lao food scene so hard?
1) Redding's Laotian cooks are as good or better than I can find at home, so why not?
2) These Lao businesses stepped up to help feed their communities.
3) For every $100 spent at an independent, locally owned business, $68 stays in the local economy and circulates 2 to 5 times funding payroll, educating children, paying for fire departments and other local services.
