Texas style brisket @ Central Coast Meat Market | Pismo Beach - SLOCo

Open now for a year and a half, Central Coast Meat Market was founded by a local who spent six years in Texas. Beef is king here, barbecued Central Texas style over oak, though other meats are also available.

I had a chance to try it in November. The whole brisket is coated with mustard, salt and pepper, smoked with wood for about 15 hours. Sold by the pound or as plates, salads or sandwiches. Brisket can be ordered lean, fatty or mix. Dubious me, I asked to see the meat first, and the countergal graciously pulled out a full brisket for me to eyeball. I ordered 1/4 pound of fatty ($18 per pound) for a first bite and watched as it was sliced from the juncture of the point and the flat. Gorgeous tasty bark, sweet smoke tones, tender to the bite, humanely raised, USDA choice beef, this is excellent 'cue. Two sauces available, but not needed, and accompaniments of pickles, peppers and onions are self-serve.
