Texas Barbecue

Now, I don't spend a lot of time in Texas. (Let's just call it a personal preference.) But driving through last year I stopped at a roadside place between 10-50 miles west of Dallas (on I-20). We were just famished and wanted lunch. What we got was a slice of heaven in two of the best "barbecue" sandwiches we have ever had. I assume it was brisket, but it almost had the consistency of pulled pork (but was beef, of course). Most of my barbeque books say that Texans are cheaters in cooking brisket in that the meat is wrapped in foil during cooking. "Who cares?!?" as my girlfriend say. It was awesome!

Does anyone have any idea what this place was, or were we dreaming? Does it have a name?
