Tex-Mex in Portland (& Utah)

Hi, I'm a NYC chowhound visiting Portland for a few days and am having some trouble finding an ideal Tex-Mex restaurant. NYC doesn't have great Tex-Mex, and being from the west, I miss it sorely. I'd particularly like to find a place with great (and generous portions of) guacamole and super-fresh ingredients. I tried to be a good hound and searched the board before posting this message; the only place I saw mentioned was Esparza's Tex-Mex Cafe, but it sounded like their emphasis is on exotic meats, which is of less interest to me. I also saw a place called Cafe Azul mentioned, but it didn't sound like Tex-Mex. Any recommendations? I'm only town for a couple more days, so I hope to hear from you SOON! Thanks in advance.

P.S. If any of you ever travel to Utah (my home state), you MUST try the relatively recent Cafe Rio--it has taken the state by storm with the most stunningly fresh and creative Tex-Mex dishes I've ever experienced. It started in my hometown (St. George, in southern Utah, which is close to Las Vegas) and has spread all over the state. This is probably the only place west of NYC that I would send Jim Leff with confidence.
