I have a unique problem. I run a soup kitchen and work with foods that have been donated. I have the most beautiful center cut very lean pork chops that I need to prepare for 130-150 people. I need to make them as tender as possible because I will be serving homeless people who may have bad teeth and can't chew meats as well as most people.
I would like to serve these next week. Any suggestions? Stove top for this quantity does not work. They would need to be baked.
