Ten-gallon hats off to Serious Texas BBQ (Ft. Collins)

I first discovered these guys when they had one place in Durango. They have since expanded there, with a couple of locations in Ft. Collins now as well. Not sure if there are any others, but they definitely live up their name.

I'm extremely picky when it comes to brisket, having grown up in Texas, where the cut is king... most places outside the state don't have a clue, including the "name" places I've tried in CO.

Serious is as serious does! Had a 1/4 lb of brisket from the wet end on butcher paper with just a bit of their sauce. Way good, and enhance with a Fat Tire, on of my favorite brews, and from right down the street in this case. The cherry chipotle salsa that they serve with their pulled pork is really special stuff, as are the cheesy potatoes, which I can no longer enjoy if I'm going to have a beer. Maybe next time...
