what is the best way to get an even lower temp on a gas stove top than the "low" setting?
i am seeing heat diffusers on amazon and assume these are the right tool for the job. What material is best? I see iron, steel, aluminum, copper?
backstory: i tried to poach fish in olive oil and the recipe said (from memory, i might not have the temps exactly right) - heat oil to 150, drop in fish, keep it around 130. well, at the lowest temp on the stove top i couldn't keep the oil below almost 160 so the fish was a bit overcooked.
this is the situation i want to fix at the lowest price point
