Technique focused cookbook recommendations?

Hi all,

You've probably heard this request before, but do you have any recommendations for a book/cookbook focused on techniques?

I'm not a complete novice, but often struggle with inconsistent results, which I believe stem from my lack of structured cooking training/education. I'd like to learn what I might already intuitively understand and then some.

FYI, I'm not really looking for anything very cuisine-specific. I love detail-oriented cookbooks.

I've come across recommendations for The Professional Chef (CIA), the Essentials of Cooking, On Cooking, Professional Cooking, and Ruhlman's Twenty.
