Best Tasting Menu for people who don’t eat seafood

We’re taking my parents-in-law to Las Vegas for a no-holds-barred 50th anniversary extravaganza next year (knock on wood) and one thing we want to do is arrange a tasting menu experience for them. I won’t say price is no object, but it’s their 50th and we really don’t have any qualms about splurging. We’ve personally been to Guy Savoy, E, and Joel Robuchon (the Mansion), and wouldn’t hesitate to go back ourselves, but our mother-in-law doesn’t eat seafood and therein lies our dilemma. Really looking for some expert advise here, fellow Chowhounds! We’re open to “just go here, and ask for changes” type suggestions, but please, only do that if you’ve personally done this and can describe the experience (we don’t want to subject them to service that may make them feel judged).
